2001 750 ml Savigny-lès-Beaune "La Dominode" 1er Cru Red Producer note: Jean-Marc Pavelot told me that he did not suffer rot problems though it was important to carefully sort the ripe from the unripe berries. "We had good sugars, averaging 12.5% and the musts were chaptalized to about 13%. Yields were down slightly from 2000, which to say from 5 to 10% and averaged 43 to 44 hl/ha. The 2001s are really quite fine as there are supple tannins because we had good levels of phenolic ripeness." Most of the wines were bottled in January. Along with Domaine Simon Bize, Pavelot is indisputably making the finest wines in the village and in particular, they age extremely well. Tasting note: Gorgeously intense, refined and very fresh elegant red and black fruit trimmed in damp, fresh earth aromas lead to big though not robust flavors that display knock out depth of extract, excellent richness and dazzling length. Quite backward and tight and this will require the better part of a decade to be at its best. Highly recommended and for what the Pavelot wines usually sell for, an indisputable bargain.
