2007 François Raveneau Chablis 1er Cru Vaillons (France, Burgundy, Chablis, Chablis 1er Cru) Burghound, 10/1/2009, October 2009, Allen Meadows (web) 92 A discreet background note of wood influence sets off an ultra pure nose of lemon peel, soil hints and sea breeze aromas that continue onto the intensely mineral and vibrant middle weight flavors that are supported by bright and ripe acidity on the oyster shell infused finish. I really admire the intensity here as this really stains the palate. Lovely juice. (drink starting 2013)

2007 François Raveneau Chablis 1er Cru Vaillons (France, Burgundy, Chablis, Chablis 1er Cru) View From the Cellar, 1/1/2009, Jan/Feb 2009, John Gilman 93+ The Vaillons is made up of thirty year-old vines, which are not particularly old by the standards of the Raveneau domaine, but really highlight the difference in age between this wine and the Montmains. The bouquet on the ’07 Vaillons is stellar, as it offers up notes of apple, candied lemon peel, beeswax, chalky soil tones, a touch of oyster shell and lovely floral tones in the upper register. On the palate the wine is deep, full-bodied and very pure on the attack, with a great core of fruit, brilliant transparency to the underlying soil, brisk, beautifully-integrated acidity and superb length and grip on the still quite youthful finish. A superb bottle. (drink 2014-2040)
